Mangoes- 2 big sized
Milk- 1 kg
Saffron- a few strands
Pour milk in a heavy-bottomed vessel. Once the milk gets boiled, simmer the flame and let the milk boil.
Keep stirring the milk at regular intervals, pushing the layer of malai (cream) that forms towards the side of the vessel. Continue to do this till the milk is reduced more than half of its quantity and till the milk thickens. This is when rabri gets formed.
- Add sugar, cardamom powder, and saffron.
- Let it cool down.
- Add the pieces of the mangoes.
- Keep it in the fridge.
- Serve chilled Mango Rabri, garnished with pistachios and saffron strands.
