Curd Rice is a  traditional dish popular in Southern India and usually served at the end of the meal. Curd rice helps to ease the effect of the spicy main course dishes. Curd rice is basically prepared with mushy rice and yogurt tempered with spices and mustard seeds.

This dish has been prepared in a different way with some veggies and more spices. It can make a complete and wholesome main course dish as well with no compromise on your veggies.

Ingredients

Cooked Rice-1 bowl

Yogurt-1/2 bowl

Mustard Seeds

Curry leaves-7-8

Dry red chilies-2-3

Moong Dal

Carrots-1-2

Capsicum-1-2

Green Chilies-3-4

Salt- as per taste

Red Chili Powder-1/2tsp

Ghee–1-2tsp

Method:

  1. Heat ghee in a pan, roast moong dal, add curry leaves, mustard seeds, and dry red chilies.
  2. Chop carrots, capsicum, and green chilies. Saute it in the pan for 5-7 minutes.
  3. Take a bowl, mix cooked rice and yogurt. Add salt and red chili powder and mix well.
  4. Add the rice concoction to the saute vegetables.
  5. Garnish it with coriander leaves.
  6. Serve it hot!

Alternative:

If you do not have cooked rice or leftover rice, here is the method:

  1. Wash and soak rice for 15-20mins
  2. Heat ghee in a pressure cooker, roast moong dal, add curry leaves, mustard seeds, and dry red chilies.
  3. Chop carrots, capsicum, and green chilies. Saute it in the cooker for 5-7 minutes.
  4. Add salt and red chili powder.
  5. Cover the lid and after a whistle, simmer the flame. Cook the rice for 5mins (if you like mushy rice, otherwise you can turn off the flame).
  6. Add yogurt and mix it well. You can also add milk if you want it a little fluidic.
  7. Garnish it with coriander leaves.
  8. Serve it hot!
